The way to truly appreciate the difference of Ganghwa rice is to eat it by itself. Just like appreciating a fine wine, it takes all of your senses, especially sight, smell and taste. Begin by feasting your eyes on the individual grains, each plump and glossy like a young maiden’s cheek. Now, it is time to titillate your olfactory sense with the rich aroma, by taking a spoonful of rice and bringing it close to the tip of your nose. At last, you can take the rice and chew, slowly savoring the taste. There are several reasons why Ganghwa rice tastes so delightful. No rice can grow on barren or poor soil. Ganghwa Island's rice paddies are in pristine and rich soil that contains partcularly high levels of magnesium, an important nutrient for good-tasting rice.  In addition, these paddies rest on reclaimed lands, maintaining an ideal balance between microorganisms and soil nutrients. Growing on this select soil, the rice is exposed to the added benefits of the island’s pristine water. The wide diurnal range gives the local rice its large grains, rick in nutrients. Daylight hours on Ganghwa Island are also longer than the national average, by as much as 0.8 hours. The local diurnal range of 9-11 is also optimal for the production of high-quality rice.
